Chicken Rice Hot Dish

Chicken Rice Hot Dish

I love fall! It's my favorite time of the year. Love all the fall colors and the cool air!

Time to start freezer meals. Makes life soo much easier.



This is easy and turned out delicious! 

Step 1:
Make 10 cups rice
I use chicken broth instead of water. Set aside.

Step 2: 
(my version of homemade creamed soup)
Melt 6 T margarine
Whisk in 6 T flour
Whisk in 3 cups milk
Add 3 tsp chicken bullion
Whisk on medium for about 3 minutes or until thickened. Set aside.

Step 3:
In large bowl add the following:
4 cups cooked, chopped chicken (I used frozen pre cooked)
4 cups chopped frozen vegetables (I used Mexican blend)
Add cooked rice
Add creamed soup
4 cups shredded cheddar cheese
Salt and Pepper to taste
Mix together! Simple.

Write on 4-5 quart size freezer bags. 
Add to bags. Freeze. When ready to use: Thaw, spray pan with Pam, cook at 375 for 30 minutes. Serve with garlic bread.

PS I made extra rice and froze it too!

Pizza Noodle Bake

My sister and I decided to create a new recipe while I was visiting her in NE recently. We think it turned out pretty tasty and we even remembered to write it down so we could share!



Ingredients
1 LB ground turkey or hamburger - browned
1/2 onion - chopped
3 garlic cloves - chopped
1 can pizza sauce
Fresh ground pepper - to taste
12 oz package egg noodles - cooked
1/2 cup sour cream
24 oz cottage cheese
1 tsp dried basil
2 cups grated mozzarella cheese

1. Brown hamburger with onion and garlic - drain. Mix in pizza sauce.
2. Cook and drain noodles.
3. Mix remaining ingredients except mozzarella cheese. Add meat and noodles, mix well.
4. Add to greased 9x13 pan. 
5. Bake at 350 for 20 minutes. Remove. Add mozzarella cheese, bake for 10 more minutes.


Serve with a salad and garlic bread.

Grill Foil Packs

I love an easy meal - and easy clean up! This is the perfect meal for both...

Foil Grill Packs

1 zucchini - chopped
2 red potatoes- chopped
4 carrots - chopped
1/4 red onion chopped
2 dinner sausage links - cut into bite size pieces

Add vegetables to bowl - drizzle with olive oil and balsamic vinigar. Spinkle with salt and pepper - toss.

Make a double layer of foil for the packs - make 2 - spray with Pam. Add 1/2 the veggies and a dinner sausage.

Grill on medium for 30 minutes. No need to turn the packs. If you want an easier clean up - eat out of the foil packs! :)

Frozen Yogurt Blueberries

This is quick to make and I think they will be quick to disappear too! I don't eat chocolate so this sweet snack is fun.

 1 container low fat Greek yogurt - I grabbed pineapple this time.
 1 container washed blueberries

Mix in bowl
Spread out on cookie sheet - freeze about one hour

Weigh out if you prefer - I got 5 - 3oz servings (yes I ate one serving as I made them)

Keep frozen until ready to eat. Not a lunch bag item, they won't stay frozen. :)

Breakfast



Hello!


Breakfast egg muffins are super easy and can be customized to your family's tastes. I also make and freeze. Makes it much easier for week ends and company...

Recipe

1 dozen eggs
1/2 cup milk
Salt and Pepper
Cooked breakfast sausage - 1 package or cooked bacon
Grated cheese

Spray muffin tin!!!
Scramble eggs, milk, salt and pepper to taste.
Pour into muffin tin.
Add 1 spoonful of sausage and 1 tablespoon cheese

Bake @ 350 for about 25 minutes


Must Have Coffee

Vanilla Coffee Creamer

 

1 can sweetened condensed milk
1 and 1/2 cups half and half or use skim if you prefer
2-4 Tablespoons Vanilla extract - I prefer 4!
Shake like crazy

Taco Soup

We had many traditions growing up in my family - my parents, one older sister and one older brother - yes, that makes me the baby of the family! One tradition was Christmas Eve supper. We always had Oyster Stew (ick - my Dad liked it so we made it) and another soup the rest of us would eat.

This year I made Taco Soup with my husband, daughter and son in law. The easy part was it was a freezer meal!

Another family Christmas tradition - after our meal, EVERYTHING must be cleaned up, then we opened presents from each other one at a time. The youngest picks the first present, whoever it goes to, opens it and picks the next present and so on.. Sound time consuming? Maybe, however, it's lots of fun to see who gets what from whom and not a jumbled mess. :)



1 lb ground turkey
1/2 small onion, chopped
1/4 cup taco seasoning
2 cups frozen corn
1 can (16 oz) black bean - drained and rinsed
2 cans (14 oz) diced tomatoes
1 can (8 oz) tomato sauce
1 can (4 oz) diced green chili's (I use hot)
Gallon size freezer bag

Brown turkey and onion - rinse and drain. Cool and add to freezer bag. Add remaining ingredients, mix, remove as much air as possible and freeze.

I double or triple so I have more meals in the freezer.

Remove from freezer and thaw in fridge. Cook in crock pot on low all day or on stove top til hot - about 30 minutes.

Serve with shredded cheese, sour cream and tortilla's.
